Mauviel copper cookware is the traditional choice of fine chefs in the French tradition. These pots and pans are thick copper coated inside (and in some cases outside) with molten tin in a process similar to soldering. This is not the look-alike modern style of stainless steel cookware laminated to copper. Granted that the stainless steel cookware is easier to maintain, but if you are prepared to put some effort into the care of your pots and pans, tin is the way to go. It conducts heat much better than stainless steel.

Mauviel tinned copper cookware does require care. Tin melts around 420 degrees Fahrenheit, so you cannot leave an empty pan unattended over high heat or use it for high-temperature searing. The tin surface benefits from seasoning and builds up a beautiful patina the longer it is used.

In addition to the tinned copper, Mauviel cookware includes a line of black steel sauté pans and broiler pans. They also make copper cookware lined with stainless steel and a laminated stainless steel cookware line with a carbon steel core rather than an aluminum core, suitable for use on induction stoves. Finally, they make a variety of products for pastry chefs and confectioners, including their famous egg white bowl. (You can easily beat egg whites to stiff peaks with a wire whisk in an unlined copper bowl, without the addition of cream of tartar.)
