The pie pan you select makes a big difference in the way your pies turn out. A good quality aluminum pie pan, unlike disposables used by bakeries, gives you the quality and performance edge which you can use repeatedly to wow you family and friends.
Why getting the Right Pie Pan is Important:
Along with good ingredients and proper preparation, the best pie pan is one that produces a crisp, flaky crust. When Good Housekeeping magazine ran a test, they found that a nonstick perforated steel pan from Chicago Metallic performed best, followed by a clear glass Corning Pyrex pie pan.
Good Housekeeping also concluded that if you have to use a disposable foil pie pan (for example, if you are donating the pie to a bake sale), you will get better results by baking it on a baking sheet rather than directly on the oven rack.
The common thread through all this is that a highly reflective pie pan causes the crust to heat too slowly. You want heat conducted or radiated to the crust as efficiently as possible. So choose a pie pan with a dark finish if you are using metal or ceramic. The same theory applies to quiche and tart pans, as well.
A nonstick finish is overkill for a pie plate, as piecrusts don't stick to much of anything anyway. However, the finish does darken the pan; and nonstick pie pans may be the only kind you see when you're shopping. Stay away from bright stainless steel, as you will likely be disappointed in the results.
A set of quality aluminum or Pyrex pie pans, along with good cookware set and a food processor and a kitchen knife set are the core tools for a great kitchen.
