A pressure cooker is a good kitchen cookware tool for making slow food quickly. The sorts of dishes you might make in a slow cooker generally work well in a pressure cooker, and they are done in minutes instead of hours. While the high temperature in a pressure cooker can have a negative effect on the color, flavor, and nutritional value of some kinds of food, it enhances the flavor and nutrient content of other things. And it's great for tenderizing tougher cuts of meat. Just don't expect crisp-tender vegetables.
Modern designs such as the Presto pressure cooker has enough built-in safety features to prevent catastrophic failure. Other major brands to consider in your research include the Mirro pressure cooker.
However, you should follow presto or Mirro's instructions for routine use and maintenance of the pressure cooker. Always check that the steam vent is clear of food debris, both after using the pressure cooker (while any residue is still wet and can be rinsed out) and just before use (in case someone else put it away without checking). Also ensure that the sealing ring is in good condition. If you use your Presto pressure cooker a lot, you might want to have a spare seal on hand.
Similarly, a pressure canner is necessary for the home canning of low-acid foods. It's basically a giant pressure cooker that can hold seven or eight canning jars. If you have an older model, check that it is in good condition, that parts and an instruction manual are still available for it, and that it has all the safety features you would find on a new canner.
